These cookies are so so great! They only contain a few simple and nutritious ingredients and are really simple to make.
Tahini is one of my favourite ingredients, ever! I put it on almost everything because I just love the flavour and how creamy it makes dishes, both sweet and savoury. It’s so versatile and many people think it gives food a particularly mediterranean taste, because it's usually the flavour you associate with hummus. But don’t be afraid to use it in sweets too because it adds an incredible depth of flavour.
I also use date syrup in these cookies. Date syrup is a completely natural sweetener which has incredible health benefits, like being a great antioxidant and, like the date, being very rich in essential minerals which develop when the date matures (all round not a bad sweetener!) not to mention its treacle-y deep and dark flavor. It pairs so well with tahini and the two are a classic combination eaten together in many Arab countries. You usually eat them with toasted pita bread for breakfast or supper, but I love to put them on porridge or even just a bowl of fruit in the morning! The syrup works as a great binder in the recipe, as well as cutting the sweetness of the cookie with the slight tang it carries.
*Date syrup can usually be found in most international food shops and some supermarkets stock it not too, but If you can’t find it you can substitute it for honey or black treacle/Molasses (but use slightly less as this is very strong!)
2 cups oats
3/4 cup coconut sugar
3/4 cup tahini
3-4 tbsp date syrup
pinch of salt
3-4 tablespoons of water
- Preheat the oven to 170c fan/190c
- Put the oats in the food processor and blend until they're a quite small, but not a flour (like in the picture above)
- Add in the coconut sugar and salt and blend until they're just combined
- Add in the tahini and blend until the mixture starts to stick together a little
- Add in the date syrup one spoon at a time and allow the mixture to start to form a dough
- If the mixture doesn't form a ball straight away add one spoon of water at a time until it does
- Form the dough into balls and space on a baking sheet, then press them down with a fork to form rounds
- Bake for about 8-10 minutes
- Leave to cool completely (so they firm up!)
