3 Make Ahead Suhoor Recipes - Oats
I'm still slightly shocked that this wonderful month is upon us again! Though you try and prepare before hand, it still seems to sneak up on you. Though the month isn't just about food and eating, or rather the lack of it, it's nice to have something delicious to look forward to before you start fasting again.
Grilled Courgette Salad
This is one of my new favourite ways to eat courgettes, straight off the grill or as chilled leftovers the next day, they make the perfect side on warm summer days. Not only is this so easy to prepare, but it combines the most fresh and mellow tone of the courgettes with the tart punch of the quick pickled red onions. Definitely a crowd pleaser!
Lentil and Squash Salad
As the weather warms up and summer draws nearer, there’s nothing more satisfying then a hearty yet light meal that leaves you full but not that icky ‘I ate too much and now i’m overheating’ full. I love versatile dishes that can be adapted to use whatever you have in the fridge during any season, this one is a personal favourite!
Coconut Truffles/ Bounty Balls
These are one of the simplest treats you’ll probably ever make. Just 5 ingredients, and an absolute crowd pleaser. At home they disappear faster than anything else, and you wouldn't even know they were nourishing! They’ve become my go-to easy sweet recipe, as they don't need to be baked and can can be made and consumed in almost 30 minutes!
Chocolate Wholemeal Muffins
Not your average muffin, I admit! This little morsel of goodness is so yummy and wholesome, made which wholemeal flour (I like to use spelt). The crunchy surface is perfect in contract to the soft and fluffy cake, and paired with a smooth coffee its a perfect way to start the day if you're in a hurry or as a tea-time snack (my favourite time and way to eat them!)
Balsamic Quinoa Salad
This Salad is absolutely delicious and so simple to make. As the weather gets warmer and the stovetop becomes less appealing, chilled meals are a life saver. I love to have this sitting in the fridge ready for lunch or dinner for whenever i’m hungry or too busy to prepare anything.
