Fruit & Nut Granola

One of my favourite things to have for breakfast is the good old Oat...in many forms, particularly Granola. However, I haven't been able to find one that I really enjoy, they're always missing something or contain too many ingredients that i've never heard of, and if not those two things then they're just extortionately priced. So I decided to make my own and share my recipe with you :)

It's so easy to make! I don't know why I'd ever buy it again, and the best think is you can mix and match whatever dried fruits, nuts and extra little goodies you like to make it your own special blend!

This is such a great way to start the day, its delicious, nutritious (not to mention that they keep you going till lunch time) and, for me, the ratio of oats to the fruits and nuts is perfect. It's perfect sprinkled on porridge, topped over greek yoghurt or simply with milk. My particular favourite way is as a light sprinkling over porridge for an extra crunch and piled with seasonal fresh fruit.

Ingredients

  • 1/4 cup Coconut oil/ Olive oil

  • 1/2 cup Honey

  • 1 tsp Vanilla 

  • 1/8 tsp Salt

  • 1 tbsp Cinnamon* 

  • 2 1/2 cups Rolled Oats 

  • 1 cup Dried Cranberries (/dried fruit of choice)

  • 3/4 cup Sliced/chopped Almonds

  • 1/4 cup Pumpkin seeds (/seeds of choice)

*I love cinnamon! Feel free to add as much as you like

Method

1- Preheat your oven to 180ºC/Fan160ºC/Gas mark 4

2- Mix the oil with the honey, vanilla, salt and cinnamon until they form a runny paste (coconut oil is a solid as room temp. so melt it until it's a clear liquid first!)

3- Add all of the oats & nuts into the oil and honey mixture until they're all well coated 

4- Spread the mixture flat onto a baking sheet and put it in the oven for 30 mins, give it a mix half way through as not to burn, or every 10 mins to bake evenly

5- Remove from the oven and leave to cool on the baking sheet

6- Once cooled mix in the dried fruit everything together including the dried fruit and store in an air tight container
