Well there’s really nothing better on a blisteringly cold day than a hot & spicy cup of chai.

We drink this all year round at home because it’s just too good. This is kinda my cheats, impatient way of making it, but for the best result you can leave this to simmer for over half an hour until it’s a deep almost terracotta colour. I also like to drink it super sweet, so I’m not sparing with the sweetener. But of course adjust it to your preference!

Serves : 2/ Time: 10-15 mins

Ingredients

  • 1 cup of water

  • 2 teabags/1Tbsp loose black tea

  • Approx. 7 cardamom pods

  • 2 sticks of cinnamon or 1/2 tsp ground

  • 3 cloves

  • 2 cups milk (i use an oat alternative )

  • Sweetener of choice (agave/honey/brown sugar)


Method

  1. Pop the cardamom seeds, and snap the cinnamon sticks (in a mortar and pestle)

  2. Add water, spices and tea to a pot and simmer for 10 mins

  3. Add the milk & sweetener and simmer further for 5 mins or until its about to overflow, then quickly remove from heat

  4. Strain and serve
