Blueberry Lemon Spritz

I’ve seen so many memes about recipe posts lately and how they always have giant essays prefacing them, and I completely agree to some extent, haha! So, this once, i’ve decided not to bore you, and have left you with a bombardment of photographs instead of my life story.

Notes

Sparkling/Tonic Water: If you prefer bitter drinks, use tonic water to dilute the syrup. To play it safe use regular sparkling water as it’ll make this drink carbonated without the very bitter edge that tonic water gives

Storage: Once cooled, store in an airtight container, a jar is perfect, and refrigerate for up to a week

Ingredients

  • 300g Blueberries

  • 2 Large Lemons (juiced)

  • 4tbsp Sugar (unrefined)

  • 4tbsp Water

  • Sparkling/Tonic Water

Method

  1. Into a small pot, add the blueberries, lemon juice, sugar and water

  2. Bring to a boil on a medium heat, and leave to simmer for about 5-7 minutes, until all the blueberries have popped, and the mixture has reduced a little, it should be a little thicker than when you started

  3. Strain the mixture and press through a sieve into a small container/jar, so that there are no small bits. It should resemble a slightly thick syrup

  4. Leave to cool with the lid off, when it has cooled, refrigerate with an airtight lid

  5. Serve about 3-4tsp, with 150ml-200ml sparkling water (or tonic water if you like a little bitterness), ice and a wedge of lemon (or add more syrup to taste if you prefer really sweet drinks!)
